Ingredients
1 tablespoon olive oil
1/2 cup leftover cooked turkey- shredded or chopped
1 tbsp onion- diced
1 tbsp red and/or green bell pepper-diced
1/2 cup boiled potatoes- sliced
2 mushrooms-sliced
1/2 cup grated cheddar or monterey jack
3 eggs, lightly beaten
1/2 cup heavy whipping cream or half and half
Salt and pepper, to taste.
Directions
In a small bowl mix eggs, cream , salt and pepper. Set to the side.
Over medium heat, pour olive oil into small non-stick skillet.
Add onion and bell pepper and cook for 3 minutes.
Stir in potatoes and cook until golden brown.
Add cooked leftover meat.
Pour egg mixture over the top.
Add cheese.
Cook until frittata is firm and the bottom starts to brown.
With a spatula flip frittata over and cook until golden brown on bottom.
Let cool on plate for 5 minutes.
